The best recipe for homemade vegan carrot cake

This healthy carrot cake is a sweet proposition of a dessert without eggs. It is very tasty and easy to make. All you need is the patience while grating carrots OR you can pass it to somebody else… To be honest, this yummy fitness recipe is good both, for the afternoon snack and also as a breakfast proposition. Especially for people who crave something sweet in the morning. If you replace sugar with stevia or add less of oil, you can treat is as a delicious oatmeal. Also you can bake the mix as cupcakes. Why not? Anyway, this carrot cake is really easy to make.

1 carrot – 15 kcal

1 mug of spelt flour (120 g) – 430 kcal

a glass of vegetable oil (250 ml) – 880 kcal

a tablespoon of flax-seed – 35 kcal

a glass of brown sugar – 390 kcal

1 tablespoon of mascarpone – 80 kcal

Ingredients for one medium size casserole vegan carrot cake

500 g of carrots (5 large size carrots)

1.5 mugs of spelt flour

1 teaspoon of baking soda

2 teaspoons of cinnamon

1 teaspoon of ginger

a teaspoon of nutmeg

3 tablespoons of flax-seed

half of the glass of vegetable oil

a glass of brown sugar

Topping: mascarpone (non vegan proposition) OR coconut whipped cream (I am allergic so I won’t even try that one for myself ;).

How to made of vegan carrot cake?

Mix together all dry ingredients in one bowl. In another bowl mix sugar and oil. Same time pour boiled hot water over the flax-seed, to the half of a mug, stir it a few times and leave it to make it sticky. Grate the carrots. Add flax-seed to sugar and oil, and mix it together. Mix dry ingredients with the wet ones and add carrot. Put it to the casserole and bake.

Bake in 180 degrees for about 50 minutes until the cake will not be wet in the middle part.

For the topping you can use mascarpone or coconut cream. Both ways are good. Enjoy your homemade sweet and tasty goodies!
